Simple Fish Sauce Recipes from The Terrace Restaurant

The Terrace Restaurant is well known and revered for its ‘daily catch’ board. Pick a fish, sides and a simple sauce to accompany your dish. Executive Head Chef Joe Lado-Devesa believes that quality ingredients should be treated with care and a simple approach. This approach lets the fish do the talking, whilst the sauce simply raises the flavour.

On Friday 23rd September 2016 chef and his local fisherman delivered a demonstration at the Great Cornish Food and Drink Festival on the Lemon Quay in Truro. It’s an incredible event that showcases everything that Cornwall has to offer for the foodies! It’s an incredible event that is well worth attending if you are on holiday in Cornwall at the time – even if it’s just to have a little stroll around the stalls and pilfer a few free samples!

Chef demonstrated how to cook seven varieties of fish and our three main sauce accompaniments. The fish was freshly line caught hours before and prepared by our local fisherman.

These are the recipes……

Romesco Sauce

2 ripe tomatoes

1 roasted red pepper

6 almonds

1 clove of garlic

Slice of white bread

60ml white wine vinegar

120ml extra virgin oil

Roast your red pepper then combine with all other ingredients except for the white wine vinegar and extra virgin oil. Fry them off for a few minutes before transferring to a food processor. Give the whole mixture a thorough mixing in the processor, then add the white wine vinegar slowly followed by the extra virgin oil.


Salsa Verde

50g capers (roughly chopped)

6 mint leaves (roughly chopped)

Handful parsley (roughly chopped)

10 anchovies (chopped)

120ml extra virgin oil

Simply combine and mix all of the ingredients together until consistent. Voila.

Sauce Verte



Soft Herbs (Parsley, Mint, Basil)

Put Spinach and herbs in a processor and mix well, add the mayonnaise.
