Cornish Fudge Recipe

Missing the taste of Cornwall now you’re home from your holidays? We got the ultimate recipe for you to remind you of Cornish summers, the sand between your toes and those dreamy, long, unhurried days.


  • 275g unrefined caster sugar
  • 100g golden syrup
  • A 227g tub of Rodda’s (it’s always got to be Rodda’s!) Cornish clotted cream
  • 1/2 a teaspoon vanilla essence
Grease and line a 20cm tin.
Heat all the ingredients gently in a pan and stir until the sugar dissolves. Bring to the boil, covered, for 3 minutes. Uncover and boil until the temperatures reaches 116°C/240°F or until it forms a soft ball when you drop a little into cold water.
Remove from the heat and beat for around 10 minutes until its becomes thick, grainy and matt. Pour into the tin and leave for 30 minutes before marking into square with a knife and leaving to set. Once set, cut up and store in an airtight container – but it’ll be gobbled up pretty quickly!
