We're delighted to announce that Joe Lado has joined Gwel an Mor as our new Executive Head Chef. Joe brings with him a wealth of experience; over 20 years working for some of the finest establishments including Chewton Glen 5* Luxury Hotel with one Michelin Star.
Originally from Spain, Joe was born in Santiago de Compostela and moved to Winchester as child. As a classically French trained chef with influences from his Spanish heritage, Joe has come to us from the Penventon Hotel in Redruth where he was Executive Head Chef for four years, and before that he achieved a Rosette whilst working as a Head Chef at the Penmere Manor Hotel in Falmouth.
Joe also organised the local Cornish Asparagus festival supporting local farmers, as well as attending the annual Cornwall Food & Drink Festival in Truro Piazza. He attends demonstrations at Cornwall College as well as at local schools to improve food awareness.
With previous roles at several exclusive venues, including working with chef Jean-Christophe Novelli at Geddes Restaurant and working as a Head Chef for the Tate Modern in London, we're excited to see, and taste, what Joe will bring to Gwel an Mor. We particularly love his ethos of creating dishes using the finest local produce, changing the menu and taking inspiration from each season's availability.
His most high-profile guest to date is Deputy Prime Minister Nick Clegg, who was overwhelmed and extremely complimentary of the buffet Joe created. So much so that when Nick Clegg’s organisers were returning for another meeting at a different venue, they specifically requested that Joe organise the menu and prepare their buffet!
